In 1875, dairy farmer William Lawrence churned out what we now cherish as cream cheese. While aiming for Neufchâtel, he went a bit overboard with the cream, and voilà—a creamier and more decadent spread was born. It’s the kind of kitchen fluke we’re forever grateful for, especially when it finds its way into the fudgy squares of brownies.
