The earliest mention of a jelly donut dates back to a German cookbook from 1532. Imagine sandwiching jam between two pieces of dough and deep-frying it in lard. Sounds decadent, right? Another early form of jelly donut is the Polish paczki, traditionally filled with rose hip, plum, or apricot jams. These donuts were originally made to use up rich ingredients before Lent, leading to the tradition of Fat Tuesday.
